  • 1-inch piece of ginger, grated
  • 2 green chilies, finely chopped (adjust according to your spice preference)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/4 cup heavy cream (optional, for a creamy texture)

Step 1: Blanch the Spinach

  1. Bring a pot of water to a boil and add the chopped spinach leaves.
  2. Let it cook for 2 minutes, then drain and immediately transfer the spinach to a bowl of ice water.

  4. After a minute, drain the spinach again and blend it to a smooth puree using a blender or food processor. Set aside.

Step 2: Prepare the Paneer

  3. Remove the paneer from the pan and set it aside.

  1. Gently add the fried paneer cubes to the spinach curry and stir to coat them evenly.
